Vanilla Bean Cupcakes with Vanilla Bean Frosting

The title of this blog pretty much says it all! My mother asked me to make these cupcakes for a friend who absolutely loves vanilla. I looked at many different recipes and finally decided to go with this one from Diana's desserts.
I love working with real vanilla bean, even though it's expensive. I love seeing the vanilla bean flecks in the cupcakes!

The batter used egg whites, rather than whole eggs. It was an easy to work with batter that came together nicely.

Diana's recipe gives you two frosting recipe to choose from. I went with the first recipe because it called for vanilla bean, versus the second, which called for vanilla extract. An important thing to note is that the frosting recipe says that it will frost 24 cupcakes, but when I made it there was only enough for 12 cupcakes.

Although these cupcakes are one single flavor, they were really delicious and simple!

Mother's Day Cupcakes

I wanted to make something special for my Mom for Mother's Day so I decided to make angel food cupcakes!
 I wanted the cupcakes to be a little more fun so I colored part of the cake batter pink, some purple, and I left some batter white. I layered the different colors of cake batter into the cupcake tins put them in the oven to bake!
After the cupcakes were done baking, it was easy to see the different layers of color!
I piped on some light and fluffy cream cheese frosting to go with the light and fluffy angel food cake. After the cupcakes were frosting, I made the toppers for these cupcakes. Using springtime colored candy corns, M&M candy, and white candy melts, I created flowers to place on top of the cupcakes.

These cupcakes were so fun to make and they were a great Mother's Day treat for my Mom!
